Our gluten-free products are also suitable for other types of diets

We do not use additives or preservatives

Our ingredients are top quality. If you are not familiar with gluten-free baking here is a short guide.

Gluten is a protein naturally found in some grains including wheat, barley, and rye. Some people react differently to gluten, where the body senses it as a toxin, causing one’s immune cells to overreact and attack it. It is important for them to follow a gluten-free diet.

Gluten provides the stretch in bread. When gluten is absent it takes other ingredients to reproduce a lovely crust, a good crumb and a lovely flavour.

Yeast

Our sourdough products are made from a gluten-free flour starter which we began here at the bakery. We nurture it every day which results in beautiful loaves with a lovely, rich flavour.

Our other loaves contain gluten-free active dried yeast, providing a similarly lovely rise and the natural flavour of a normal loaf.

 

Gluten-free flours

We use a range and different blends of gluten-free flours, including potato flour, rice flours, and maize (corn) flour. However, here are a couple more we use, which you may not have heard of before.


Buckwheat flour

Contrary to the name, there is no wheat in buckwheat! It actually comes from fruit seeds, so it is naturally gluten-free. It is good for you as it contains copper, manganese, phosphorus and is a good source of dietary fibre. It gives a lovely flavour to the bread and it explains why our buckwheat boule is so popular with our customers.


Tapioca 

This gluten-free flour comes from the root of the cassava plant and is similarly full of healthy nutrients, including vitamins (such as folic acid and B6), iron, calcium, copper, manganese and is a  good source of dietary fibres.

 

Binding agents

Xanthan gum 

This stabiliser helps to replace the elasticity that gluten provides.


Psyllium Husk powder

This powder comes from the seeds of a plant so it provides dietary fibre but it also helps to give the bread more stretch, helping to replace the action of gluten.

Our products are suitable for coeliacs and other diets

Coeliacs

Our products are safe for Coeliacs. We only make gluten-free products, so there is no risk of cross-contamination.

Dairy-free

All our bread is suitable for those with dairy intolerance as the majority contain no dairy at all. Brioche rolls and the sourdough boule contain plant-based butter, which is dairy-free and vegan .

Vegan diet

You can order the vegan options in our shop by selecting the vegan tab. All our vegan loaves are made with aquafaba or flaxseed to replace the egg white. We replace honey with maple syrup and milk with rice milk. The vast majority of our loaves do not contain any dairy products. Cakes are not currently available in the vegan range but we are working on these in the development kitchen.
